October 10, 2025 – The buzz around Grand Prairie about Radici Wood Fired Grill was undeniable. As food lovers always seeking our next culinary adventure, we were intrigued by this collaboration between MasterChef Judge Tiffany Derry and entrepreneur Tom Foley.
Radici – meaning “Roots” in Italian – draws inspiration from Derry’s experiences in Italian restaurants, Foley’s family heritage, and their travels through Italy. But it’s more than just inspiration; it’s a sensory journey where the enticing aroma and sizzle of wood-fired cooking immediately awaken your taste buds.
We started with the Grilled Tomino Cheese, which really set the tone for the culinary feast. The combination of prosciutto, mushrooms, and aged balsamic on crispy crostini was exactly what we didn’t know we needed. Always the adventurous ones, we also tried the Mussels with N’duja sausage. The white wine and garlic sauce was so good that we ended up fighting over the last piece of grilled focaccia to soak it all up.
For our main courses, we couldn’t resist the Oxtail Ragu – hand-cut pappardelle pasta with braised oxtails, pecorino romano, and allspice in a rich tomato sauce. Each bite was superb; the meat was so tender it melted on my tongue. The pasta, made in-house, had that perfect texture that only comes from true craftsmanship.
We also ordered the Rosewood Wagyu Skirt Steak from their wood-fired grill, cooked over Texas Post Oak Wood. The smoked onion, garlic confit, and Italian salsa verde perfectly complemented the beautifully charred meat. We paired both entrées with the Grilled Carrots on the side – yes, carrots as a side dish that we actually got excited about! The stracciatella cheese and carrot top gremolata transformed humble vegetables into something extraordinary.
Throughout the evening, we could see and smell the wood-fired grill in action, adding that distinctive smokiness that you can’t replicate with traditional cooking methods. The open kitchen design allows you to see the culinary magic unfold in real time.
What impressed us most was how Radici manages to honor Italian traditions while blending in Texas influences – from the Texas Post Oak Wood to the local ingredients. Derry and Foley have created something special here, a restaurant with deep roots that celebrates both heritage and innovation.
As we left that evening, already planning our return visit (I’ve slated the Lobster All’ Astice for the next time), we agreed: Radici isn’t just another Italian restaurant. It’s a culinary experience that truly ignites your senses and leaves you craving more.
